Depends on how old the expansion is. I had to search all over for bits and pieces of guides on compiling the WotLK, because at the time, all of them were heavily outdated. Not sure if they still are or if someone finally posted an updated guide somewhere.
Basically, I did it in one night with zero experience doing it, just lots of googling - it's relatively simple.

There is a guide if you are really interested. I was recently in the same situation as you. I tried a few repacks, enjoyed them, but wanted to add a few things, and that wasn't possible using a repack.
I initially got only part way through it, got frustrated and quit. A few days later I decided I was seeing it through one way or another, and did. As was already mentioned, google is your friend on this one, as is youtube.
